Misal Pav ek prasiddh Maharashtrian dish hai, jo spicy aur flavorsome moth bean (matki) curry ke saath serv ki jati hai. Yeh ek popular street food hai, jo Maharashtra ke alawa poore Bharat mein bhi pasand ki jati hai.

Ingredients

For Misal:

  • 1 cup matki (moth beans) or sprouted moong (green gram)
  • 1 medium-sized pyaaz (onion), finely chopped
  • 2 medium-sized tamatar (tomatoes), finely chopped
  • 2 hari mirch (green chilies), finely chopped
  • 1 tablespoon adrak-lassan ka paste (ginger-garlic paste)
  • 1 teaspoon lal mirch powder (red chili powder) (adjust to taste)
  • 1/2 teaspoon haldi powder (turmeric powder)
  • 1 tablespoon misal masala (available in stores) or garam masala
  • 1 tablespoon oil
  • 4-5 cups pani (water)
  • Namak (salt) to taste
  • 2 tablespoons chopped hara dhania (coriander leaves) for garnish
  • Nimbu ke tukde (lemon wedges) for serving

For Pav (Bread):

  • 6-8 pav breads

For Farsan (Garnish):

  • 1 cup farsan or sev (fried savory noodles)

For Rassa (Spicy Curry):

  • 2 cups pani (water)
  • 1/2 cup grated nariyal (coconut)
  • 1 tablespoon kaju (cashew nuts)
  • 1 tablespoon khus khus (poppy seeds)
  • 1 tablespoon oil
  • 1 teaspoon rai (mustard seeds)
  • 1 teaspoon jeera (cumin seeds)
  • Few curry leaves
  • 2 hari mirch (green chilies)
  • 2 sukhi lal mirch (dry red chilies)
  • 1 tablespoon lal mirch powder (red chili powder) (adjust to taste)
  • 1/2 teaspoon haldi powder (turmeric powder)
  • 1 tablespoon gud (jaggery)
  • 1 tablespoon tamarind pulp
  • Namak (salt) to taste

Method / Preparation

Follow step-by-step instructions

For Misal:

  1. Ek pressure cooker mein matki ko dho kar paani mein soak karein, ya fir moong ko sprout kar lein.

  2. Ek pan mein oil garam karein aur usme rai, jeera, aur curry patta daalein. Saute karein jab tak rai crackle na karein.

  3. Fir, pyaaz aur hari mirch daal kar golden brown hone tak saute karein.

  4. Ab, tamatar aur adrak-lassan ka paste daal kar tamatar soft ho jayein.

  5. Misal masala, lal mirch powder, haldi powder, aur namak daal kar masalon ko acche se mix karein.

  6. Ab soaked matki (ya sprouted moong) daal kar use achhe se mix karein.

  7. Pani daal kar misal ko ek boil aane tak cook karein.

For Rassa:

  1. Ek pan mein oil garam karein aur usme rai, jeera, curry patta, hari mirch, aur sukhi lal mirch daalein. Saute karein jab tak rai crackle na karein.

  2. Ab, grated nariyal, kaju, aur khus khus daal kar use bhunein jab tak nariyal golden brown ho jayein.

  3. Fir, lal mirch powder, haldi powder, gud, tamarind pulp, aur namak daal kar masalon ko acche se mix karein.

  4. Pani daal kar rassa ko ek boil aane tak cook karein.

To Serve Misal Pav:

  1. Ek serving bowl mein misal daalein aur us par farsan ya sev sprinkle karein.

  2. Ek side par pav breads rakh dein.

  3. Misal pav ko garnish karne ke liye hara dhania se sajayein aur nimbu ke tukde ke saath serve karein.
