Churma Laddu

Relish authentic churma laddu made from coarsely ground wheat and jaggery, enriched with ghee, cardamom, and nuts for a wholesome dessert.

Ingredients

For the Dough & Frying:

  • 1.5 cups Whole Wheat Flour (Gehun ka atta)

  • 3-4 tbsp Semolina (Sooji/Rava) - for a grainy texture (optional but recommended)

  • 4-5 tbsp Ghee (clarified butter) - melted, for binding the dough

  • ½ cup Warm Milk or Water - for kneading (milk makes it richer)

  • A pinch of Salt

  • Ghee or Oil - for deep frying

For the Sugar Syrup/Jaggery Mixture:

  • 1 cup Powdered Jaggery (Gur) or ¾ cup Powdered Sugar - adjust to taste

  • 2-3 tbsp Water - if using jaggery

  • ½ tsp Cardamom Powder (Elaichi)

For Binding & Flavor:

  • ⅓ cup Ghee (clarified butter) - melted

  • 2 tbsp Fine Chopped Nuts - almonds, pistachios, cashews

  • 1 tbsp Raisins (optional)

  • 2 tbsp Desiccated Coconut (optional)

Method / Preparation

Follow step-by-step instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the whole wheat flour, semolina (if using), and a pinch of salt.

  2. Add the 4-5 tablespoons of melted ghee. Rub the ghee into the flour with your fingertips until the mixture resembles breadcrumbs.

  3. Gradually add warm milk or water, little by little, and knead into a firm, tight dough (similar to puri dough). Don't make it soft.

  4. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

Step 2: Fry the Dumplings (Boondi)

  1. Heat ghee or oil for deep frying in a kadai (wok) on medium heat.

  2. Take a perforated ladle (boondi jhara) or a greased sieve. Take a small portion of the dough and press it through the holes directly into the hot oil to make small, grain-like dumplings. Alternatively, you can make small, marble-sized balls with your hands and fry them.

  3. Fry them on low to medium heat, stirring occasionally, until they turn golden brown and crisp. This is a slow process; ensure they are cooked from inside.

  4. Remove them using a slotted spoon and drain on paper towels. Let them cool completely.

Step 3: Make the Churma (Crumb)

  1. Once the fried dumplings are cool, crush them into a coarse powder. Do not make a fine powder.

  2. You can use a food processor or grinder, but pulse it only a few times. The traditional method is to pound them in a large mortar and pestle (haman dasta/ulta). The grainy texture is essential for the ladoo.

Step 4: Prepare the Sweetener

  • If using Jaggery: In a small pan, heat the jaggery with 2 tbsp of water on low heat until it melts completely. Strain to remove any impurities. Let it cool slightly.

  • If using Sugar: No need to make a syrup. Just ensure the sugar is finely powdered.

Step 5: Mix and Shape the Ladoos

  1. In a large bowl, combine the coarse churma powder, cardamom powder, and chopped nuts.

  2. Pour the melted ghee over the mixture. Mix well with a spoon or your hands.

  3. Now, add the slightly warm jaggery syrup (or powdered sugar) and raisins/coconut (if using). Mix everything thoroughly. The mixture should hold shape when pressed.

  4. Check for binding: Take a small portion and press it in your fist. If it holds its shape, it's perfect. If it's too dry, add a little more warm ghee. If it's too wet, add a bit more crushed churma or some roasted gram flour (besan).

  5. While the mixture is still warm (to make shaping easier), grease your palms with ghee and take a portion of the mixture. Press firmly and shape it into round ladoos (balls).

  6. Optionally, garnish each ladoo with a piece of nut.
