Ingredients

  • 1 cup sabudana (sago pearls), soaked overnight
  • 2 medium potatoes, boiled, peeled, and mashed
  • 1/2 cup roasted peanuts, coarsely crushed
  • 2-3 green chilies, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup fresh coriander leaves, chopped (optional)
  • 1 teaspoon cumin powder
  • 1 tablespoon lemon juice
  • Rock salt (sendha namak) to taste
  • Oil for deep frying

Method / Preparation

Follow step-by-step instructions
  1. Rinse the sabudana thoroughly and soak it in just enough water to cover the pearls by about 1/2 inch for 4-6 hours or overnight, until soft and fluffy.
  2. In a large bowl, combine the soaked sabudana, mashed potatoes, crushed peanuts, chopped green chilies, grated ginger, chopped coriander (if using), cumin powder, lemon juice, and rock salt.
  3. Mix all the ingredients well with your hands to form a dough-like mixture. Ensure everything is evenly incorporated.
  4. Divide the mixture into equal portions and shape them into flat, round patties or vadas, about 2 inches in diameter.
  5. Heat oil in a deep frying pan or kadai over medium heat. To check if the oil is hot enough, drop a tiny piece of the mixture; it should sizzle and rise to the surface immediately.
  6. Carefully slide the shaped vadas into the hot oil, frying a few at a time to avoid overcrowding the pan.
  7. Fry the vadas until they turn golden brown and crispy on all sides, about 3-4 minutes per side.
  8. Remove the fried vadas with a slotted spoon and place them on absorbent paper to drain excess oil.
  9. Serve the hot and crispy Sabudana Vada immediately with green chutney or yogurt.
