Check off items as you gather them
  1. 1 cup boiled and mashed potato
  2. 1/4 cup singhara (water chestnut) flour
  3. 1/2 teaspoon rock salt
  4. 1/4 teaspoon roasted cumin powder
  5. 1 tablespoon lemon juice
  6. 2 tablespoons chopped fresh coriander
  7. Oil for shallow frying

Method / Preparation

Follow step-by-step instructions
  1. In a bowl, combine the mashed potato with singhara flour, rock salt, roasted cumin powder, lemon juice, and chopped coriander. Mix thoroughly until a homogeneous mixture forms.
  2. Divide the mixture into equal portions and shape each into flat, round cutlets.
  3. Heat a little oil in a non-stick pan over medium heat. Shallow fry the cutlets on both sides until golden brown and crisp, about 3–4 minutes per side.
  4. Transfer to paper towels to drain excess oil. Serve hot with a fasting-friendly mint chutney.
