Relish farali kachoris with a light water chestnut dough filled with spiced mashed potato – perfect for fasting days.
For Dough:
Water chestnut flour: 1 cup
Amaranth flour: ¼ cup
Rock salt: 1 tsp
Ghee: 2 tsp
Water: as needed
For Filling:
Boiled & mashed potatoes: 1 cup
Fresh coconut (grated): 3 tbsp
Roasted peanuts (crushed): 2 tbsp
Cashews (finely chopped): 1 tbsp
Green chilies (finely chopped): 2
Ginger (grated): 1 tsp
Rock salt: to taste
Black pepper powder: ½ tsp
Roasted cumin powder: ½ tsp
Fresh coriander (chopped): 2 tbsp
For Frying:
Ghee: 1 cup
Prepare Dough:
Mix flours and rock salt. Add warm ghee and rub. Knead into a firm dough using warm water. Rest for 15 mins.
Prepare Filling:
Heat 1 tsp ghee. Sauté ginger, chilies, cashews, and peanuts.
Add potatoes, coconut, cumin powder, pepper, salt, and coriander. Cook for 2 mins. Cool.
Shape Kachoris:
Divide dough into balls. Flatten each, place filling in center, seal edges, and flatten gently.
Fry:
Heat ghee on medium-low. Fry kachoris until golden-brown (4-5 mins/side). Drain excess ghee on paper.
