Ingredients

  1. 1 cup soaked singhara rice (water chestnut rice), drained
  2. 1 cup diced moraiya (a sweet potato variety allowed during fasting)
  3. 1 small onion, thinly sliced
  4. 1 green chili, slit (optional)
  5. 1/4 teaspoon turmeric powder
  6. 1/2 teaspoon rock salt
  7. 1 tablespoon ghee or oil
  8. 2 cups water (adjust as needed)
  9. Fresh coriander leaves for garnish

Method / Preparation

Follow step-by-step instructions
  1. Soak the singhara rice for 2 hours and drain well.
  2. Heat ghee in a pan and sauté the sliced onions and green chili until soft and translucent.
  3. Add the diced moraiya and sauté for 2 minutes.
  4. Add the soaked rice along with turmeric powder and rock salt, stirring gently to combine.
  5. Pour in water, bring the mixture to a boil, then reduce heat and simmer until both the rice and moraiya are tender and the water is absorbed (about 20 minutes).
  6. Garnish with fresh coriander leaves and serve hot.
