Ingredients

  • 1 cup Samak Chawal ka Atta (Barnyard Millet Flour)
  • 1/2 cup Dahi (Yogurt), kam khatta
  • 1/4 cup Pani (Water), ya zaroorat ke mutabik
  • 1 tsp Adrak aur Hari Mirch ka paste (Ginger and Green Chili Paste)
  • 1 tsp Sendha Namak (Rock Salt), ya swad anusar
  • 1 tsp Eno (Fruit Salt) / ya 1/2 tsp Baking Soda
  • 2 tbsp Tel/Ghee (Oil/Clarified Butter), tempering ke liye
  • 1/2 tsp Jeera (Cumin Seeds)
  • 5-6 Curry Patte (Curry Leaves)
  • 1 Hari Mirch (Green Chili), lambe tukdo mein kati hui
  • 2 tbsp Pisa Hua Nariyal (Grated Coconut), garnish ke liye
  • Dhaniya Patta (Coriander Leaves), chopped, garnish ke liye

Method / Preparation

Follow step-by-step instructions
  1. Ek bade bowl mein samak chawal ka atta, dahi, adrak-hari mirch ka paste aur sendha namak achche se mila lein. Zaroorat ho toh thoda pani dal kar smooth batter bana lein. Batter ki consistency idli batter jaisi honi chahiye.
  2. Batter ko dhak kar 10-15 minute ke liye rest karne dein.
  3. Ek dhokla steamer ko garam karein aur dhokla plates ko tel se grease kar lein.
  4. Rest kiye hue batter mein Eno (ya baking soda) dalein aur uspar 1 tsp pani dal kar activate karein. Gently mix karein, overmix na karein.
  5. Batter ko immediately grease kiye hue dhokla plates mein dalein aur garam steamer mein 12-15 minute tak ya jab tak toothpick saaf na nikle, steam karein.
  6. Dhokla pakne ke baad, steamer se nikal kar thanda hone dein aur phir chote tukdo mein kaat lein.
  7. Ek chote pan mein tel ya ghee garam karein. Jeera dalein aur jab woh crackle hone lage, toh curry patte aur hari mirch dalein. Ek minute tak bhune.
  8. Is tempering ko dhokla ke tukdo par evenly spread karein.
  9. Pise hue nariyal aur dhaniya patta se garnish karein. Garma garam serve karein.
