  • 1/2 cup roasted peanuts, coarsely crushed
  • 2 green chilies, finely chopped
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon sendha namak (rock salt), or to taste
  • 1/2 teaspoon sugar (optional)
  • 2 tablespoons arrowroot flour (or singhara atta)
  • Oil for shallow frying

Method / Preparation

Follow step-by-step instructions
  1. Wash sweet potatoes thoroughly. Boil or steam them until tender, then peel and mash well in a large bowl.
  2. Add the coarsely crushed roasted peanuts, finely chopped green chilies, chopped coriander leaves, lemon juice, sendha namak, and optional sugar to the mashed sweet potato. Mix everything until well combined.
  3. Sprinkle in the arrowroot flour (or singhara atta) and mix to form a cohesive dough. If the mixture is too sticky, add a little more flour, one teaspoon at a time.
  4. Divide the mixture into small, equal portions. Shape each portion into a flat, round fritter or a small patty.
  5. Heat oil in a non-stick pan over medium heat for shallow frying. The oil should be hot enough but not smoking.
  6. Carefully place a few fritters into the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes on each side until golden brown and crispy.
  7. Remove the fried fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Serve the hot Farali Sweet Potato & Peanut Fritters immediately with green chutney or plain yogurt.
