Homemade Soan Papdi: Flaky Indian Sweet

  • 1 cup gram flour (besan)
  • 1 cup all-purpose flour (maida)
  • 1.5 cups ghee (clarified butter), divided
  • 2 cups granulated sugar
  • 1 cup water
  • 1/2 teaspoon green cardamom powder
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped pistachios, for garnish
  • 2 tablespoons chopped almonds, for garnish

Method / Preparation

Follow step-by-step instructions
  1. In a large heavy-bottomed pan, heat 1/2 cup of ghee. Add gram flour and all-purpose flour. Roast on low flame, stirring continuously, until the flour turns light golden brown and aromatic (about 15-20 minutes). Set aside to cool slightly.
  2. In another pan, combine sugar, water, and lemon juice. Bring to a boil over medium heat, stirring until sugar dissolves. Continue to boil without stirring until the syrup reaches a two-string consistency (test by dropping a small amount between thumb and forefinger; it should form two strings). Remove from heat and stir in cardamom powder.
  3. Pour the hot sugar syrup onto a lightly greased marble slab or heat-resistant surface. Let it cool for 5-7 minutes until it's pliable but still warm enough to work with.
  4. Using greased hands or a spatula, begin to pull and fold the syrup from the edges towards the center. Continue pulling and folding until it becomes a thick, opaque, and slightly hardened mass.
  5. Add the remaining 1 cup of ghee to the slightly cooled roasted flour mixture. Mix well to form a paste-like consistency.
  6. Create a ring with the pulled sugar mass. Begin to stretch it outwards. As it stretches, fold it in half, twist, and stretch again. Repeat this process, gradually adding small portions of the ghee-flour mixture to the strands as you stretch and fold. The goal is to incorporate the flour evenly and create thin, flaky layers.
  7. Continue stretching and folding for about 15-20 minutes until the mixture turns into thin, thread-like flakes. Be gentle to avoid breaking the delicate strands.
  8. Lightly grease a square baking tray or a shallow pan. Gently transfer the Soan Papdi mixture into the prepared tray, pressing it down lightly and evenly with your palms or a greased spatula.
  9. Sprinkle with chopped pistachios and almonds. Let it set for at least 30 minutes at room temperature.
  10. Once set, cut into desired square or diamond shapes. Carefully separate the pieces and store them in an airtight container.
