  • 1 cup split green moong dal
  • 3 cups water
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 inch ginger, grated
  • 2-3 green chilies, slit (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish

Method / Preparation

Follow step-by-step instructions
  1. Rinse the green moong dal thoroughly under running water until the water runs clear.
  2. In a pressure cooker or heavy-bottomed pot, combine the rinsed dal, water, and a pinch of turmeric powder. If using a pressure cooker, cook for 3-4 whistles on medium heat. If using a pot, simmer until the dal is tender, about 20-25 minutes, adding more water if needed to reach desired consistency.
  3. While the dal cooks, prepare the tadka (tempering). Heat ghee or oil in a separate small pan over medium heat. Add cumin seeds and let them splutter.
  4. Add the finely chopped onion to the pan and sauté until it turns golden brown and translucent.
  5. Stir in the grated ginger and slit green chilies (if using) and cook for another minute until fragrant.
  6. Add the chopped tomatoes, remaining turmeric powder, red chili powder (if using), and salt to the pan. Cook, stirring occasionally, until the tomatoes soften and the oil starts to separate from the mixture (about 5-7 minutes).
  7. Pour the prepared tempering mixture into the cooked dal and mix everything well. Bring the dal to a gentle simmer for 5 minutes to allow the flavors to meld.
  8. Garnish generously with fresh chopped coriander leaves before serving hot.
