Ingredients

Check off items as you gather them
  1. 1 cup besan (gram flour)
  2. 1 cup water
  3. 1/2 teaspoon turmeric powder
  4. 1/2 teaspoon salt
  5. 1 tablespoon sugar
  6. 1 teaspoon lemon juice
  7. 1/2 teaspoon ginger-green chili paste
  8. 1/2 teaspoon baking soda
  9. 2 tablespoons oil
  10. For tempering:
    1. 1 tablespoon oil
    2. 1/2 teaspoon mustard seeds
    3. A few curry leaves
    4. 1 pinch asafoetida
    5. 1 teaspoon sesame seeds

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, whisk together besan, water, turmeric, salt, sugar, lemon juice, and ginger-green chili paste until smooth and lump-free.
  2. Let the batter rest for 20 minutes.
  3. Just before steaming, gently stir in the baking soda.
  4. Grease a steaming tray with oil and pour in the batter evenly.
  5. Steam for 15–20 minutes over medium heat until the dhokla is set and spongy.
  6. Prepare the tempering by heating oil in a small pan, adding mustard seeds, curry leaves, sesame seeds, and a pinch of asafoetida until they splutter.
  7. Pour the tempering over the steamed dhokla, let it cool slightly, then cut into squares and serve warm.
