Core Ingredients
Mango:
1 cup ripe mango (choose one):
Fresh (peeled, pitted, diced) – Alphonso, Kesar, or Ataulfo work best.
Canned unsweetened/sweetened mango pulp (e.g., Kesar or Alphonso pulp).
Frozen mango chunks (thaw slightly or blend frozen for a thicker texture).
Yogurt:
1 cup plain yogurt (traditional Indian dahi, Greek yogurt, or regular).
Vegan option: Unsweetened coconut or almond yogurt.
Liquid:
½ cup milk (dairy or plant-based like almond, coconut, or oat milk) OR water (adjust to desired thickness).
Sweetener:
2–3 tbsp sugar, honey, maple syrup, or condensed milk (adjust to taste based on mango sweetness).
Optional Flavor Enhancers
¼ tsp cardamom powder (or crush 2–3 green cardamom pods for fresh powder).
Pinch of saffron (soak in 1 tsp warm milk for 5 minutes before adding).
½ tsp rose water (for a floral aroma).
1–2 tbsp heavy cream or coconut cream (for extra richness).
Add-Ins for Texture/Decoration
4–5 ice cubes (omit if using frozen mango).
Garnishes:
Chopped pistachios or almonds.
Mint leaves.
A sprinkle of ground cardamom or cinnamon.
Edible rose petals.
1. Prep the Mango
Fresh Mango:
Choose a ripe, sweet mango (e.g., Alphonso, Kesar, or Ataulfo).
Peel the skin using a sharp knife or vegetable peeler.
Slice the flesh off the pit (seed) and dice into chunks (1 cup total).
Canned Mango Pulp:
Use 1 cup of unsweetened or sweetened pulp (adjust sugar later).
Frozen Mango:
Thaw slightly or blend directly for an icy texture (no need for ice).
2. Assemble Ingredients
Yogurt: Use 1 cup plain unsweetened yogurt (full-fat for creaminess, Greek yogurt for thickness).
Liquid:
Milk (dairy or plant-based) for richness.
Water for a lighter drink.
Sweetener: Adjust based on mango sweetness:
Start with 2 tbsp sugar/honey (add more later if needed).
Flavor Boosters:
Cardamom: Crush 2–3 pods to make fresh powder, or use ¼ tsp pre-ground.
Saffron: Soak 2–3 strands in 1 tsp warm milk for 5 minutes (adds aroma and golden color).
Rose Water: ½ tsp for a floral twist (optional).
3. Blend Smooth
Order Matters: Add mango, yogurt, milk/water, sweetener, cardamom, and ice (if using) to the blender.
Blending Time:
Blend on high for 45–60 seconds until completely smooth. Scrape down the sides halfway.
For extra frothiness, blend an extra 10–15 seconds.
Texture Check:
Too thick? Add 1–2 tbsp milk/water and blend again.
Too thin? Add 1–2 tbsp yogurt or frozen mango.
4. Taste & Adjust
Sweetness: If the mango isn’t sweet enough, add 1 tsp sugar/honey at a time. Blend and taste.
Spices: Add a pinch more cardamom or saffron milk for depth.
Acidity: If too tangy, balance with a splash of milk and a touch of sugar.
5. Serve Fresh
Chill Glasses: For a frosty experience, refrigerate glasses for 10 minutes.
Pour & Garnish:
Classic: Top with chopped pistachios, a mint sprig, or a pinch of ground cardamom.
Luxury: Drizzle with saffron-infused milk or sprinkle edible rose petals.
Serve Immediately: Lassi separates if left standing, so enjoy right away!
