Moong Dal: ½ cup yellow split moong dal
Rice: ½ cup rice (non-sticky varieties work best)
Water: Approximately 4 to 5 cups (adjust based on your preferred consistency)
Ghee or Oil: 1 tablespoon (for tempering and flavor)
Cumin Seeds: ½ teaspoon
Turmeric Powder: ¼ teaspoon
Asafoetida (Hing): A pinch
Salt: To taste
Optional/Add-in Ingredients:
Ginger: 1-inch piece, finely chopped or grated
Green Chilies: 1–2, finely chopped (adjust depending on your spice preference)
Vegetables: Such as chopped carrots, peas, tomatoes, or potatoes for extra nutrition and texture
Fresh Coriander: Chopped, for garnish
Rinse the Rice and Dal
Measure ½ cup of yellow moong dal and ½ cup of rice (you can adjust these quantities as needed). Rinse them thoroughly under running water to remove any impurities.
Soak the Dal and Rice (Optional but Recommended)
If you have the time, soak the rinsed rice and dal together in water for about 20–30 minutes. This step helps soften the grains, making them cook faster and more evenly.
Prepare Optional Vegetables
While soaking, chop any vegetables you’d like to add (common choices include carrots, peas, potatoes, or tomatoes). These add extra flavor, texture, and nutrition to your khichdi.
Heat the Cooking Medium
In a heavy-bottomed pot or a pressure cooker, heat 1 tablespoon of ghee (or oil, if preferred). Ghee enhances the flavor and lends a lovely richness to the dish.
Sauté Spices and Aromatics
Add ½ teaspoon cumin seeds (and optionally a small piece of ginger or even one green chili for a mild kick). Sauté for 30–60 seconds until they become fragrant and the cumin seeds start to sizzle.
Incorporate the Vegetables
If using, add your chopped vegetables to the pot. Sauté them for 2–3 minutes until they soften slightly; this creates a flavorful base.
Add the Rice and Dal
Drain the soaked rice and dal. Add them directly into the pot (or pressure cooker) with the sautéed aromatics and vegetables.
Season the Mixture
Stir in ¼ teaspoon turmeric powder and salt (to taste). These spices give the khichdi its golden hue and comforting flavor.
Pour in Water
Add water in a ratio that achieves a soft, porridge-like consistency. Generally, 4 to 5 cups of water works well for a moderately mushy khichdi. You can always adjust this later based on your desired thickness.
Bring to a Boil and Simmer
Raise the heat to bring the mixture to a boil. Once boiling, lower the heat, cover with a lid, and let it simmer until both the dal and rice break down into a creamy, cohesive texture. In a pressure cooker, cook for about 3–4 whistles.
Rest and Final Adjustments
Once cooked, turn off the heat and let the khichdi rest for a few minutes. This resting period allows the flavors to meld and the texture to settle.
Garnish and Serve
Give the khichdi a gentle stir, then garnish with freshly chopped coriander leaves. For an extra layer of richness, drizzle an additional teaspoon of ghee over the top. Serve hot with your favorite accompaniments such as yogurt, pickle, or a simple salad.
