  • 500g fresh okra (bhindi), washed, dried, and chopped into 1-inch pieces
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 tbsp cooking oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1.5 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish

Method / Preparation

Follow step-by-step instructions
  1. Ensure okra is completely dry. Heat oil in a large pan or skillet over medium heat.
  2. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until they turn light golden brown, about 5-7 minutes.
  3. Add the chopped tomatoes and cook until they soften and the oil starts to separate, about 5 minutes.
  4. Stir in turmeric powder, red chili powder, coriander powder, and salt. Cook for 1 minute, stirring continuously, until fragrant.
  5. Add the chopped okra to the pan. Mix well, ensuring the masala coats all the okra pieces.
  6. Cover the pan and cook on low-medium heat for 10-12 minutes, stirring occasionally, until the okra is tender-crisp. Avoid overcooking to prevent sliminess.
  7. Remove the lid, increase heat to medium-high, and cook for another 3-5 minutes, stirring gently, to allow any excess moisture to evaporate and for the okra to get slightly roasted.
  8. Stir in the garam masala. Garnish with fresh coriander leaves before serving.
