  • 300g spaghetti or linguine
  • 4-5 tablespoons olive oil
  • 8-10 cloves garlic, thinly sliced
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 10-12 curry leaves
  • 1-2 green chilies, slit lengthwise (adjust to taste)
  • 1 teaspoon red chili flakes (or more, to taste)
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Method / Preparation

Follow step-by-step instructions
  1. Cook the spaghetti according to package directions in a large pot of salted boiling water until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet or pan over medium heat.
  3. Add mustard seeds and cumin seeds. Once the mustard seeds begin to splutter, add the asafoetida (hing) and curry leaves.
  4. Add the thinly sliced garlic and green chilies to the pan. Sauté until the garlic turns light golden brown and fragrant, being careful not to burn it.
  5. Stir in the red chili flakes and cook for another 30 seconds.
  6. Add the drained spaghetti directly into the skillet with the garlic tadka. Toss well to coat the pasta evenly with the flavored oil and spices.
  7. Pour in about 1/2 cup of the reserved pasta water, tossing continuously until a light sauce forms and coats the pasta. Add more pasta water if needed to reach desired consistency.
  8. Season with salt to taste and mix thoroughly.
  9. Garnish generously with fresh chopped cilantro before serving hot.
