Ingredients

A. For the Curry Paste:

  1. 5-6 dried red chilies (Kashmiri chilies for less heat)
  2. 1 tbsp coriander seeds
  3. 4-5 garlic cloves
  4. 1 inch ginger piece
  5. 1 medium onion, roughly chopped
  6. 2-3 tbsp water (for grinding)

B. For the Curry (Gravy):

  1. 2 tbsp oil
  2. Prepared curry paste (from above)
  3. ½ tsp turmeric powder
  4. 2 tbsp besan (gram flour)
  5. Salt to taste
  6. 2 cups mixed vegetables (carrots, french beans, broccoli, mushrooms, capsicum, baby corn) – finely chopped
  7. 1 stalk lemongrass (optional), lightly bruised
  8. 400 ml (about 2 cups) thick coconut milk
  9. 1-1.5 cups water or vegetable stock

C. For Noodles and Toppings:

250 grams noodles (egg noodles, hakka noodles, or regular wheat noodles)

Fried Toppings:

  1. 1 large onion, thinly sliced
  2. 4-5 garlic cloves, thinly sliced
  3. ½ cup raw noodles (for frying)
  4. Oil for deep frying

Fresh Toppings & Garnishes:

  1. ½ cup roasted peanuts, coarsely crushed
  2. ¼ cup fresh coriander, finely chopped
  3. 2 green chilies, finely chopped
  4. 1 lemon, cut into wedges
  5. 1 tsp chili flakes
  6. 2 spring onions, finely chopped (optional)
  7. 1 boiled egg, sliced (optional for non-veg)

Method / Preparation

Follow step-by-step instructions
  1. Prepare the Paste and Fried Toppings: Soak dried red chilies in warm water for 10-15 minutes. Drain and grind with coriander seeds, garlic, ginger, onion and 2-3 tbsp water to a smooth paste. Set aside. Heat oil in a pan and fry sliced onions (tossed with 1 tsp cornflour for extra crunch) until golden and crispy. Remove. Fry sliced garlic until light golden. Remove. Fry raw noodles until they puff up and turn light brown. Drain all on paper towel.
  2. Make the Besan Slurry: In a dry pan, roast besan on low heat for 2-3 minutes until fragrant. Cool and mix with ¼ cup water to make a smooth, lump-free paste. Keep aside.
  3. Cook the Curry: Heat 2 tbsp oil in a large pan. Add the prepared curry paste and fry on medium heat for 4-5 minutes until oil separates. Add turmeric powder and salt. Add chopped mixed vegetables and stir for 2-3 minutes. Add the besan slurry and mix well. Pour in 1 cup water (or vegetable stock) and add bruised lemongrass (if using). Bring to a boil, then simmer for 4-5 minutes until vegetables are slightly tender. Lower the flame, slowly add coconut milk and stir gently. Simmer for another 4-5 minutes on low heat. Do not boil vigorously. Turn off heat and remove lemongrass stalk.
  4. Boil the Noodles: Bring a large pot of salted water to a boil. Cook noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with a few drops of oil to prevent sticking.
  5. Serve: Place a generous helping of boiled noodles in a bowl. Ladle hot coconut curry over the noodles. Top with crispy fried onions, fried garlic, crushed peanuts, fried noodles, fresh coriander, chopped green chilies, chili flakes, spring onions, and a squeeze of lemon juice. Mix and enjoy!
