  • 2 medium potatoes, boiled and mashed
  • 1/2 cup mixed vegetables (carrots, peas, green beans), finely chopped and blanched
  • 1/4 cup paneer, grated
  • 2 tablespoons gram flour (besan)
  • 1/2 teaspoon ginger-garlic paste
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying
  • 1 tablespoon ghee or oil
  • 1 large onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1/2 cup water or vegetable broth
  • 2 tablespoons fresh cream (optional)

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, combine mashed potatoes, mixed vegetables, grated paneer, gram flour, ginger-garlic paste, 1/4 teaspoon turmeric, 1/4 teaspoon red chili powder, 1/2 teaspoon garam masala, and salt. Mix well to form a dough-like consistency.
  2. Divide the mixture into small, equal portions and gently roll them into smooth, bite-sized balls (koftas).
  3. Heat oil in a deep pan or kadai over medium heat. Carefully deep-fry the koftas in batches until golden brown and cooked through. Remove and drain on paper towels.
  4. For the curry, heat ghee or oil in a separate pan. Add the chopped onion and sauté until golden brown.
  5. Add the tomato puree, remaining turmeric powder, red chili powder, and garam masala. Cook, stirring occasionally, until the oil separates from the masala.
  6. Pour in the water or vegetable broth and bring the gravy to a simmer. Season with salt to taste. If using, stir in the fresh cream for a richer texture.
  7. Gently add the fried koftas to the simmering gravy. Cook for 5-7 minutes, allowing the koftas to absorb the flavors.
  8. Serve hot with basmati rice, naan, or roti.
